Aubergine Curry


Umami means “essence of deliciousness” in Japanese and, in this Northern Indian-inspired dish, aubergine brings all the umami. Served with basmati rice & topped with walnuts make this is a sure favourite.

Cooking instructions:

  1. Empty the ingredients from the packet into a pot & add the same amount of cold water (use packet to measure)
  2. Let stand for 20 minutes to re-hydrate.
  3. Bring to a boil & cook for 5 – 8 minutes.
  4. Stir occasionally & add more water, as needed.
  5. Remove from the heat & let stand to cool for 5 minutes.
